Low Carb Egg Recipes

Hi all! Can anyone recommend any recipes for dinner that include eggs but are relatively low carb? Apart from an omelette, I'm struggling to come up with anything that doesn't involves some sort of bread or rice?!

    I have my own recipe that doesn't use cheese, and I use fresh tomatoes.

    Quiche, egg muffins, scrambled eggs, fried eggs, boiled eggs etc.

    Eggs are low carb in and of themselves. If you want to keep them that way, eat more eggs and don't cook a starchy side.

    An omelet isn't just an omelet. There are hundreds of things you can add to it from cheese to vegetables, to lean meats. All of that is low carb and pretty easy to make.

    Egg, sausage/bacon and veggie scramble.
    Fried eggs on top of sweet potato (if you'll eat those) or other veggies.
    Egg and cheese muffins/casserole.
    Stir fry with cauliflower fried rice.

    I do bacon, eggs & southwestern egg beaters and cheese for lunch a lot just scramble cheese and eggs together with egg beaters to keep the cal low but up the bulk

    -sauté a portobello mushroom cap in a little oil and balsamic vinegar. Season with salt and pepper.
    -sauté spinach and onions to the side of the mushroom
    -fry an egg (I like sunny side up, but over easy is good too) and season with salt and pepper
    -serve the egg inside/on top of the mushroom cap with the spinach/onions either on the side or underneath the mushroom

    *I usually make two mushrooms and two eggs as just one of each is a little too low-cal for me

    As has been pointed out, eggs are naturally low carb. For dinner, frittata comes to mind, and for an extra treat, souffle.

    - I like putting an egg on a frozen veggie burger with lots of condiments
    - 1 small corn tortilla is relatively low in carbs or any sort of low carb tortilla + eggs, cheese and salsa for a burrito, or depending on if you're eating beans fried egg over fat free refried beans with salsa and cheese
    - low fat egg salad made with greek yogurt and curry powder (http://www.101cookbooks.com/archives/curried-egg-salad-recipe.html)
    - Lyonnaise style salad topped with a poached egg
    - saute any sort of greens or veggies with some grated cheese and throw a fried egg on top

    Cheese burger pie.

    Fry 1-2 lbs beef and an onion
    add
    1-2 c cheese
    6-10 eggs with 1/2c mayo, add more if you want
    pepper, salt and spices (like onion powder or garlic)

    Bake at 350 for about 30min.

    Take out the onion if you want it to be almost zero carb.

    Thanks guys, I know eggs are low carb, but it's the rest of my diet that isn't!! so looking to implement some lower carb dinners :)
