Pumpkin Bread
Threw this together to use up some leftover pumpkin. Turned out really good...
Preheat oven to 375 degrees
Dry Ingedients
Wet Ingredients
Mix the wet and dry ingredients together. Spray loaf pan and bake for about 40 minutes, until a toothpick comes out dry.
Let sit in the loaf pan for about 10 minutes, then turnout and let cool completely. I usually like to toss in some chopped walnuts and raisins, but passed on it this time.

- 2 cups whole wheat flour
- 1/2 cup brown sugar
- 1 tbs ground flax seed
- I tsp baking soda
- 1 tsp baking powder
- 1\4 tsp salt
- 1.5 tsp pumpkin pie spice
- 1/4 tsp powdered ground ginger
- 1/4 tsp turmeric (I just like to add a little bit of this when I can)
Wet Ingredients
- 3 eggs (lightly beaten)
- 1 cup puréed pumpkin
- 1/2 cup coconut oil (or whatever oil you prefer)
- 1/3 cup unsweetened apple sauce
- 1/4 cup honey

nice, do you think an artificial sweetener can replace the brown sugar? Would it change the texture of the bread?0
