How do you season and cook your Duck breast and Lamb

i bought some duck breast and lamb steaks and have only cooked both a couple times so would like to know how you season and cook yours

I raise lamb. So yummy!! I like mine in the slow cooker with a bit of vinegar(usually balsamic) and some garlic. If I want it a bit less fatty, I will remove the roast/steaks from the slow cooker when complete and baste with a sweet bbq sauce and a bit of spice with some heat in it like a cajun and then bbq on high for a bit to develop a nice crust.0

Can only comment on wild 'caught' ducks. The main thing with duck is to cook it rare to med rare. Cook it too long and it gets tough and can get real gamey. I really like using a teriyaki marinade for 4-6hrs(sometime over night when I'm lazy). Method #1 Cube and wrap in 1/3 strip bacon(you can add a water chestnut too to keep in the moisture) tooth pick to hold together and put on the grill until the bacon is crispy. Method #2 Cut the duck breast into strip and cook as you would fajitas. Method #3 pan fry with a little bacon grease, if the duck breast still has the skin on(and fat) you can skip the bacon grease. When just about done add some mushrooms and a little red wine, serve over rice or potatoes. Good Luck!0
