Pork rib loin 2.9 lbs - how long to cook at 300F?

It's boned, obviously - I want to make this

which says 6 hours for a 5-7 lb roast, just halve that, right?

I want the pork to be really tender - would cooking it at an even lower temp for longer help?

I don't have a crockpot, fyi. Or a meat thermometer (not going to happen today, will get one for future later). I usually cook stovetop things & roast the same way every time (high temp 20 mins to lower temp X mins depending on type of meat), never slow roast.

    AND if i'm going to freeze some of it, maybe leave off the sauce?

    Don't know for how long, but I would put a thermometer in it and cook it to 145 degrees F internal temperature. Be sure to put the thermometer so it isn't near the bone.
