Healthy Gourmet?

Alright. I love food. I think that since eating is something I have to do to survive, I might as well enjoy it. Now, I don't like fast food or prepackaged/premade food. I can't stand it. I think it's often too salty and lacking in actual flavour. Not to mention it's full of GMOs and chemicals and who knows what. I have a farm deliver fresh, organic, GMO free vegetables directly to my house once a week.
What I love is gourmet food. I'd classify myself as a foodie. One of my favourite dishes are lamb medallions in a port reduction. Yum. My favourite Xmas gift last year was volume one and two of Julia Child's The Art of French Cooking.
I host dinner parties for my friends once a month. I get out the fine china, the crystal, the cloth napkins, the silver, etc. I'll prepare a seven course meal. I love cooking. I love feeding people. I love the companionship that comes from sitting around a table with friends and family over a nice meal and a bottle of wine.
Unfortunately, these kinds of foods are heavy in things like butter and cream. Cheese too. Mmm, cheese. Alcohol.
Anyone know of some good sources for healthier gourmet cooking, let it be actual cookbooks (which I prefer over websites), or websites?
