I'm starting to lose my creativity on healthier kids meals/snacks. Anyone have any good recipes?

    Mine eat what we're having if we're home. If it's something I know that they really won't eat (usually casseroles or spicy things), I just make them a taco or some pasta with tomato sauce and cheese.

    School lunch is a major pain here though because they often won't eat it, so I alternate between bagels with cream cheese, English muffin pizza (cold, they don't care), turkey bacon sandwich, or chicken nuggets. Always with a side of fruit (whatever's in season, lately it's been a lot of apples) and maybe a cookie or a few goldfish/chips. With some juice or chocolate milk on the side.

    School snack needs to be easy to eat so I usually just pack them some goldfish/animal crackers/cheez-its or a cereal bar or something.

    Snacks at home is fruit, cheese, or a yogurt, typically.

    Don't know about 'healthy' but *shrug* they have a healthy weight. They're 7.

    @Francl27 thank you! That sounds very similar to what I do too! I've been trying to find alternatives because I'm learning how bad a lot of our ingredients are! I find the best options at Aldis believe it or not.

    I got to try those black bean brownies.

    I do homemade chicken nuggets too, when I'm not lazy, just coat them with a bit of olive oil then bread crumbs, then bake.

    I use ground chicken, 2 shredded zucchini, an egg, and breadcrumbs and make nuggets to bake and freeze.
    I also make puréed cauliflower and add in seasoning and about 4oz of extra sharp cheese and freeze it in ice cube trays to mix with pasta for Mac and cheese.
    Everything with ground beef has 8-16oz of finely choopped mushrooms in it.
    Burgers, meat loaves, and meatballs are all half veggies (zucchini or squash, mushroom, spinach, whatever I have on hand) and I freeze those too.
    I mix vegetables into just about everything to lower calorie counts, but also to add nutrition to my family's food.
