How have i gained 7 pounds?!

Two years ago i lost 13 pounds and got down to 20% body fat and I managed to maintain this for quite some time. I put about 7 Pounds on recently and have been doing everything to get this back down but I cant and the weight now seems to be creeping on and i'm back at 25% body fat. It seems the more exercise i do the more i gain, i eat about 1200 calories per day and watch what i eat like a hawk but still it goes on! Could this be water weight?

I'm 5 foot 2 and weigh 120lbs (today) I've been trying to get to 112 but cannot seem to achieve this. I do spinning twice and and a hiit class, should I do more?

I also weigh absolutely all my food.

    1) How are you measuring calorie intake?
    - weigh everything on a digital scale
    - choose entries in MFP database with care - double check them, do not use other people's recipes
    - also log calorie drinks

    2) How are you measuring body fat?

    3) Spinning and HIIT are both cardio - for body composition do progressive resistance but then you'll have to stop looking at scale

    Water weight. If your weight isn't going down after a couple of weeks then your eating more than you think.
