Tried to make some low-carb, high protein waffles - made a disgusting mess instead

1 1/2 cups of almond flour
1/4 cup coconut flour
1/4 cup whey protein
1/4 cup splenda
2 cups nonfat milk
1/2 cup oil
1/4 cup egg whites
baking powder
salt

Congealed mess, stuck to the waffle iron. Same result when I tried to make a pancake out of it. Doesn't hold together at all.

Ended up whipping up a quick batch of traditional Bisquick waffles (used nonfat milk and egg whites), which fed my urge.

However, there's a wrinkle - prior to making the above food disaster, I mixed up an additional Tupperware container containing the almond and coconut flour, whey protein, baking powder, salt, and splenda, thinking I would have that handy. What do I do with it? Any way I can save what I mixed up? I'm planning on making some crock-pot stew soon. Can I add that to the stew to thicken it up? Would the baking soda mess it up? Is there some way I could rescue the flour and make waffles out of it in the end???

Anyways, just wanted to share. I should stop being such a kitchen mad scientist, lol.

    Maybe use it as the base for biscuits?

    I've mixed up excellent pancakes with cottage cheese:
    1/2 cup cottage cheese
    1/2 cup rolled oats
    3 eggs
    Blend them up, then just cook them like normal pancake batter. You can't really taste the cheese, though if you really want to offset it add cinnamon (and a coworker of mine tried these and added a bit of pumpkin, which she said was great).

    Best part is that these take far less measuring time than regular pancakes and they cook up nice and light.

    That splenda will mess things if you try to use it as a thickening agent on a stew. For my palate, it'll make things too sweet. I would go for a custard - either coconut or pumpkin (tis the season) - add can of coconut milk or can of pumpkin maybe some coconut flakes, eggs (you need the yokes), adjust sweetness, bake (bain marie) until set.
    You can also add some cornstarch mixed it with chopped apples adjust seasoning and make a separate topping of rolled oats, nut butter, apple butter and maple syrup, assemble as an apple crumble and bake. You can use your mixture on the topping of any crumble, of course, by adding oats and maybe some walnuts.
    BTW, some of the greatest dishes ever conceived came out of kitchen ooops...
