Hey! So glad I found this group, I LOVE cooking and baking, I have a lot of pictures of my food on my profile and people are always asking if its healthy, yes it is. Would love people to add me so I can see what you make, and get some ideas etc. Also thought you could all post your favourite-to-make recipe here so maybe we can all expand our cookbooks a bit
Mine is low calorie lasagne. It comes in at around 450calories which is good for a big yummy dinner. You need a 500g pack of mince as low fat as you can find (usually 5%), 1 courgette, 1 onion and 1 red pepper. (You could add mushrooms or whatever veg you want). Chop it all up, put in a pan until the mince is browned. Add 400g of passata and 400g of chopped tomatoes. Season with some mixed herbs and salt and pepper. Simmer for around 20 mins until its thickened. While it does that you can make the white sauce. 500g fat free natural yoghurt, 2 eggs, pinch of nutmeg, mix. Get your dish, put half the meat mix, top with lasagne sheets, top with sauce, and repeat, add cheese to the top. Bake at 180-200 for around half an hour. It is sooooo nice I always get compliments and always have some in the freezer for a lazy dinner. You could use quorn too to reduce calories or just be meat free.

I love cooking! I trend healthy but also love to bake fun new treats for my kids and pot lucks. Tonight I am making a cheesy tex-mex bake for my son's class and inside out carrot cake muffins. For dinner I am making spaghetti squash tossed with goat cheese, roasted eggplant and red peppers and a little balsamic glaze0

Cooking is my hobby. I even have a recipe blog and participate in a cooking site with an active online community.
