How do you measure the amount of fat used for cooking?

I'm having a really hard time to >properly< measure the amount of oil I use for cooking.
I want to neither under- nor overestimate the amount because the oil is so rich in calories.
The reason I think it's difficult to measure is that the pan/pot is never really empty/clean at the end of the cooking process, but I can't possibly figure out how much that is or what it consists of (partially oil, partially water extracted during the cooking process, idk what ...), I think you get the point
What are your methods?

i just add it all better to overestimate then underestimate0
