This is probably more of a side dish than an actual meal but I love it as both. You said Vegetarian not Vegan so I am hoping you don't mind cheese. The recipe is as follows: 2 cups of cooked quinoa, 1/4 cup of crumbled feta, 1 cup baby spinach or arugula, 1/4 cup dried cranberries, 1/4 cup of whole almonds chopped, 1/2 cup chopped onion & 1Tbsp Extra Virgin Olive oil. This can be eaten warm after it is 1st made or cold after it rests in the fridge either way it is yummy.

Why not look up a vegetarian recipe site?
http://vegweb.com/ is my favorite... there are a zillion others.0 -
I make a pasta salad with a half a cup of pasta, a quarter of a cup each of black beans, chick peas and kernel corn, add tomato chunks, diced peppers (or any other veggies you have) and a bit of crumbled feta. Can make an easy vinaigrette for it as well with olive oil, vinegar and oregano. Keeps for days, travels well, keeps you feeling full and my entire family will eat it.0
