healthy potluck ideas for a family reunion

I have a family get together this Sunday to celebrate my great uncles 95th birthday. I would love to take something healthy for all of us. Meat will be provided so I need side dishes to serve about 30-40. Oh and no cheese dishes.

Check out skinnytaste.com, there are a ton of side dishes, casseroles, etc that you could bring. I recently made the Southwest Black Bean Salad (http://www.skinnytaste.com/2009/06/southwestern-black-bean-salad.html) , it wouldn't feed 30 but you can multiply the recipe. Good luck!0

I'm going to a family potluck soon too. I'm taking a Kale salad. Similar to this one:

But I'm swapping out the super-sweet dressing for a homemade vinaigrette and adding cherry tomatoes. You'd probably have to double or triple it!0 -

The edamame/black bean combination make this salad a protein and fiber powerhouse. Dressed lightly in a lime and cumin vinaigrette, this salad is perfect for a barbeque or packed for lunch. I’ve even wrapped it up in a high fiber wrap for dinner.
Feel free to play around with the vegetalbes, adding more peppers, or chucking in some chopped tomatoes or avocado.
Corn, Black Bean & Edamame Salad
Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes
Yield: 8 servings
Serving Size: 1/8 of salad
8 ounces frozen corn (about half a bag)
10 ounces frozen, shelled edamame, prepared according to package instructions
1 15.5 ounce can black beans, drained
1 red bell pepper, diced
1/4 cup cilantro, roughly chopped
1 clove garlic, grated through mircoplane or finely diced
juice of one lime
1 tablespoon cumin
2 tablespoons olive oil
Sea salt and pepper to taste
Step by step
1.In a large bowl, combine the corn, edamame, black beans, red pepper and cilantro.
2.In a separate bowl, combine the rest of the ingredients with a whisk, then add to the corn mixture.
3.Refrigerate to allow for corn to thaw and for the flavors to meld.

You can never go wrong with a yummy Three Bean Salad:
1.5 cups cooked kidney beans
1.5 cups cooked chickpeas
2 cups cooked green beans
1/2 white onion, finely diced
1/2 green bell pepper, finely diced
Dressing:
2 T olive oil
2 T apple cider vinegar
parsley, salt & pepper to taste
Mix dressing, stir in beans, onion and bell pepper and let marinate for at least 2 hours. It's super yummy!0 -
Why not take assorted cut up fruit. This time of year it should be in season...watermelon, canalope, grapes, strawberries...thats another choice for those who can't have cake (if that is what is served to the birthday boy).0

baked sweet potatoes, cut and each piece wrapped in foil... that way everyone can have a single bit you could even use a huge roaster/crock-pot0

Everything sounded so good. I like both the the bean salads. And, I thought of the mini bagels with light cream cheese mixed with dill and greek yogurt add cucumbers on top with fresh dill. Thanks everyone for your input I appreciated it.
