So here's a great recipe for some energy balls that I tried making for the first time today! They taste delicious and they're vegan!

1 c. rolled oats
3/4 c.raw almonds (roughly chopped)
1/2 c. dried blueberries
1/3 c. raw cashews (roughly chopped)
1/4 c. raw sunflower seeds
1/2 c. raw pistachios (roughly chopped)
1/3 c. raw pipitas
1 c. raw almond butter
1/4 c. unsweetened applesauce
1/3 c. raw honey (or agave for vegans)
1 tsp. cinnamon
Salt to taste

Mix ingredients using hands. Portion each ball using 1/2 tablespoon measuring spoon and form the shape using hands. Keep in the freezer for 1 hour. Store in refrigerator.

The recipe makes about 45 balls. Each ball has about 85 calories, 6 grams of fat, 2 grams of fiber, and 4 grams of protein.

Yayy another energy ball fan! i just made some today, here is the recipe I used:

    3/4 cup raw almonds
1/3 cup unsweetened organic coconut shreds
    1/4 cup raw pumpkin seeds
    1/4 cup raw walnuts
    1/4 raw hulled sunflower seeds
    3 tablespoons chia seeds
    3 tablespoons organic cocoa powder
    6 dates
    5 prunes
dash of cinnamon and vanilla bean powder
    1 tablespoon water

In a food processor combine all the dry ingredients until fine crumbs. Then add in the dried fruit and process again until the mixture comes together. Add the water help the dough stick together then roll into balls, eat, and enjoy! These are the best satisfying snack ever!

Great recipe! I will give it a try (but subbing quinoa flakes for the oatmeal - I don't do well with oatmeal.)

Sounds good and oh so healthy! Gonna make some the next time our grandkids are here!! They are such good eaters - like healthy stuff!! Give them the choice of 'junk' or fruit and they'll choose fruit, or even certain raw veggies. Thanks for sharing this recipe!
