One dish Haddock with Super Greens
I made the most amazingly simple and healthfully delicious recipe last night. I will share here, maybe someone can enjoy as much as I do!!
What you will need:
1 large skillet with a lid (for steam retention)
4 large haddock fillets (fresh or frozen)
1 clove garlic, minced
2 tbsp coconut oil (you can use EVOO instead - I prefer coconut)
4 cups mixed super greens (I buy the costco greens with baby kale, baby spinach chard and radish)
2 cups White Linen Marinara (Costco sells it and it is the best premade marinara I've tasted, but feel free to use your favourite)
How you make it:
Warm oil in skillet on medium heat
add fish fillets, cover and 'steam' until cooked
uncover, add 1 cup super greens, cover and let wilt (about one minute), add each cup of greens the same way until al 4 are added
Add Marinara, let simmer 5-10 minutes
Serve as is or on a bed of lettuce, raw broccoli or cauliflower. I put it on pasta for my kids and hubby since they don't low-carb.
