What are your favorite fast, inexpensive, healthy meals?

    Chicken Fajitas, potato soup or lighter zuppa toscana, chili. Most of my meals are pretty quick and inexpensive. Maybe not all that healthy but, I make it work for my cal allowance.(1220) Last night I tried a new recipe for cheeseburger mac and it was fantastic and super easy.

    Anything with beans or lentils.

    May not be fast; there will be some preparation involved. If you use a slow cooker in the morning, though, your dinner will be ready in the evening.

    Fast is tricky. Most of my meals don't need a lot of hands on time, but some preparation beforehand. Defrosting, soaking, boiling.

    Almost everything I make is healthier than the readymade equivalent. Home cooking is possibly the most important thing you can do for your health. And it can be fun too. Especially if you make something you like

    I usually buy cheap ingredients. Together they become cheap but delicious meals. Soups and stews are great ways to "stretch" or even omit meat. (But don't do that too much or too often, you need your protein.) Potatoes, canned tomatoes, carrots, onion, cabbage, pork, chicken, tuna, sardines, eggs, pasta, rice, barley, oatmeal, peanuts and peanut butter, apples, oranges, bananas, frozen vegetables and berries, dried peas, beans and lentils, are versatile (google ingredient+recipe) and cheap, and combining these properly can provide nearly all the nutrition you need.
