Exercise is killing me as I'm so unfit!

Hey all!
The title may be a little misleading but bear with me...
I've never really "exercised" before. We got a dog with the intention of walking more every day. that was 2 years ago. All that happened was we drove to the local park instead of walked (It's less than a mile from the house!) and threw a tennis ball (in a throwing arm for ease!) to exercise the dog. I've never exercised before and now I'm counting calories and powering round the park.
But damn if walking at a decent pace isn't half killing me. I get to the top of a moderate hill and I'm wet through with sweat. I can feel a burning sensation in my lungs that passes within minutes, it's exhilarating! I actually feel alive instead of like a sack of spuds.
My only issue is going to be calorie intake. For the past 8 or so years me and my partner have lived on one meal a day. At first it was due to limited budget meaning we couldn't afford to eat three times a day. About a year ago I started cooking healthier foods than the processed stuff we had been living on. An average evening meal has been about 1,000 calories. I'm working on reducing portion sizes by going over the recipes and reducing them down by about a quarter. Eating breakfast in a morning is strange to me as is eating lunch. But my hubby is in on this with me so together we will adjust to the change.
What a way to waffle over an introduction...
