Spicy Chicken, Bean and Rice Bake

Just made this for lunches this week, it's really tasty!
500g chicken breast
1 can red kidney beans, drained & rinsed
100g dry brown rice
1 can diced tomatoes
1 small can green chillies
1 tbsp chicken stock powder
1 tsp chilli powder
75g shredded cheese
Put all ingredients except the rice and cheese in a large saucepan and boil until the chicken breasts can be shredded. Shred them, add them back to the saucepan and stir in the dry rice. Pour the mix into a lasagna pan and bake @ 180 for 40 mins. Spread the shredded cheese over the top, pop it back in the oven until brown.
It has a kick!
6 serves, 250 cal a serve.

Does the rice dry out with the reheating? I always have a hard time with rice dishes once cooked, unless I put a lot of extra sauce in.

I've not reheated any yet, but I make similar dishes and haven't had a problem with reheating, so long as I reheat it in a covered container. If I nuke it while uncovered, things like this do dry out.0

Update: It reheats really well! I cooked it maybe a bit long, but it means that the tomato has kind of caramelised, and so it has a very rich flavour. It's totally making regular lunch rotation!0

Put your serving in a bowl and cover with a damp paper towel when reheating in the microwave. Make sure the towel is tightly tucked under the bowl to keep the steam inside. Rice needs the steam to plump back up

Do you have to cook the rice first?
Nope! There was sufficient liquid in the chicken mix to cook the rice in the oven. If you think too much has boiled off while cooking the chicken, add a bit of water before stirring in the rice. But mine cooked just fine and made a nice dense bake.0 -
