cooking egg omlet in waffle iron

I am a Diabetic who needs to go low carb so i wanted to trick my brain to think its eating carbs for breakfast so i whip up some eggs with cheese and ground nuts chives spices pour the egg mixture in my greased waffle iron and in 4 mins i have this puffed egg waffle it looks like a flour based waffle but no flour at all just eggs cheese spices..it puffs up really big too fun to watch it cook... and as a diabetic who has a new health care plan and a new dr in 2016 i want to get my BS under control... its working too

Cool. I keep wanting to try eggs in the waffle iron, I'm just worried it will get messy.
Another one to try is protein pancakes:
1/2 cup cottage cheese
1/2 cup oatmeal
3 eggs
Toss all ingredients in a blender, mix until smooth, then pour and cook like regular pancakes.0 -
I don't have a waffle iron so I tried it on my George Foreman grill. It made a mess! Lol0
