This is pretty healthy recipe and so easy to log in on MFP. I love recipes like this as I get to enjoy them and get to see the exact calories I am consuming.
Ingredients:
- 1 cup Classico Alfredo Sauce (original or with roasted garlic)
- 140 grams of 100% Rice pasta Fettuccine
- 220 + grams of chicken breast cut into strips (depends how much protein you want)
- 4 tsp olive oil
- 1 small onion sliced into strips
- 5 mushrooms + (Depends how much you want)
- 5 green onions (less or more, depends on your preference)
- herbs or vegetable or other seasoning that you like
- 2 tsp of hot sauce (optional)
- Two cloves of garlic minced or more (optional)
Directions:
- In a pot, boil the pasta rice according to package.
- In a pan add 3 tsp of olive oil on medium heat, add in the onions, cook for a few minutes then add in the chicken breast. At this point you can add in your seasoning and hot sauce. Cook and stir the chicken with the onions until white. Then add in the garlic and mushrooms and cook until you think it's done.
- Drain the pasta rice, set aside the chicken.
- Use the same pot you drained the pasta, put it on low/medium heat. Add in the last tsp of olive oil and then add the pasta then the chicken. Mix them together. You can add in more herbs or seasoning.
- After you mixed in the pasta and chicken, add in the green onions and then measure 1 cup of Alfredo sauce and pour it on and mix well until everything is coated.
- Lower the heat and close the lid on the pot for a few minutes to get it warmed up.
- Serve with whatever you like, cheese, herbs, etc..
