Post-Major-Operation Weight Loss

Hey guys. 
Recently I had a pretty major operation (double leg amputation. I think that qualifies right?
), and one of the obvious side effects of not doing anything for 7 months was the weight gain. I used to weigh around 240, and was reasonably happy although wanted to lose a little. Now I'm 273, and... not so happy. 
Obviously working out is going to be difficult (I do have prosthetics, but still...), but I plan to do at least some stuff. Mostly I'm just going to be using the food diary app to track my food intake and such. Hopefully it'll work out.
My goal is 200lbs (I'm 6'2 and naturally pretty stocky). Feels like a long way away.
