The only ingredient I'll avoid is coriander (cilantro). Thats because I hate it with a passion, and to me it tastes like rotting washing up liquid.

I find it really funny that I love coriander (in the US, this refers to the seeds of the coriander/cilantro plant) but I can't stand cilantro (the fresh leaves of the same plant). How one plant can produce something wonderful and something awful at the same time is beyond me. At least both nutmeg and mace are yummy. I can't make my gr-grandmother's doughnuts without mace.

Collards in soup?!? I know you're kidding....just stop. And is the escarole a combination of snails and a butter roll?!? I may...MAY make a soup with kale in it today. It'll be an accident I'm sure...not intended to be an ingredient ;)

I have a stew in my fridge with pork roast, potatoes, coriander, saffron, green olives, and a few more things. Pork is "the other white meat" so no red meat to give me a heart attack.

+1. The body is VERY efficient. Additives in most foods (usually to increase shelf life or stabilize) aren't usually the issue when someone is unhealthy. That would first be weight (number one predictor of health status), genetics and hereditary traits, and then eating habits and environment.

Let me just say that it isn't "what" people are eating that's the issue if we're speaking of health. It's the LACK of what they aren't getting. Many people out there don't meet their essentials and exceed in others.

How many would agree that eating red meat increases your risk for heart disease? To say you can eat anything you want as long as you aren't obese, I would argue that your percentages for certain types of diseases would increase.

Years ago people didn't see the problem with smoking. I think we would all agree that if you smoke you increase your risk to have a few things wrong with you.

I am not saying that if you have a hamburger once a week you are going to die of a heart attack. I do think that if certain foods/ingredients in foods are consumed in certain amounts you increase your risk for some negative things to happen. You can still be under your calorie goal and eat a lot of red meat. You can still be under your calorie goal, in my opinion and not eat healthy.

I am not looking to eliminate foods/ingredients but I will be aware of what I am putting in my body. I am not a nutritionist and don't claim to be. I do think it is a topic that goes deeper than everything is fine just don't go over your calorie goal.
While there are certain behaviors that would increase risk tremendously (smoking, stuntman, venomous animal handler, etc.), risk of health is something that EVERYONE confronts DAILY by just getting up in the morning. Arguments could easily be made that living in Houston or LA increases respiratory ailments, you increase getting shocked by plugging in an appliance, that driving everyday easily increases your risk for a fatal car accident, etc.
These are things that people don't even think about because........................while there is risk, it's not that high in percentages.
If your genetics suck, then I'd be more concerned. If not, then don't over analyze the issue. You'll just stress yourself out...............which increases risk of HBP and heart disease. ;)

Plain old pimento stuffed olives (the remainder will be added to my vodka gimlets). Since I used coriander, not cilantro, it went into the stew at the beginning along with the rest of the herbs and spices. I did my own sazon mixture although I needed to substitute saffron for the annato seeds since I forgot to pick some up at the local Mexican market. I have tons of saffron (well actually about 2 oz and it is the real stuff from Kashmir, left over from when I worked at Penzeys and we got a kilo in that had insect casings. We couldn't sell it so the employees got to keep it if they wanted).

Kathy, I love beets. It used to be the canned but now it's the fresh ones steamed. They are so delicious.

I am really into fresh whole foods these days more than canned foods, and frozen veggies and fruits are okay for me, but this has nothing to do with the ingredients--it's all about taste. Pure taste. The only ingredients I watch out for due to intolerance are lactose, soy, and Stevia seems to increase my acid reflux.

On the whole, unless there is a medical reason to limit certain ingredients, then doing so is all about preference.

ETA: oh, and large does of caffeine and any carbonated drinks make me miserable as well, so I avoid the carbonation :( and moderate the caffeine. :)

This thread isn't about losing weight. I realize that you can lose weight and eat about whatever you want as long as you eat in moderation, exercise etc.... I just know certain people try to watch out for different ingredients in their food. Maybe you are 100% healthy and eat whatever you want and that works for you. For my personal interest, I am interested in posts like kshama2001 to have an eye out for different ingredients of foods that we are eating. I would like to have the information about these ingredients and then make my own decisions on whether or not I would like to eat them.

I know we should eat a variety of foods every day. Don't eat too much of one thing. For me, I get into a groove of trying to stay healthy and I like certain foods. I just want to make sure the majority of things I put in my body, in my mind, are healthy for me. This doesn't mean I will eliminate all types of different foods because of their ingredients. It might help me to make a decision to choose to eat a little more of a certain type of food over another.

I suggest for "ideal" health, work for a 30/30/30 split between proteins/carbs/fats, and pick fibrous carbs more often. It's not avoiding certain foods, but saying a generous "yes" to many foods.

I assume the other 10% of calories must come from ... alcohol?
    :)

LOL yeah, lousy maths. For MFP make it 33/33/34. In reality we need the 10% for margin of error.

OP the relative risk between a chicken breast and a steak for heart health for instance, could be 0.000001%. I think it is riskier to eat a limited diet and possibly miss out on trace vitamins and minerals say, found in red meat.

This site has a decent list for you to look through. It located at the bottom of the page. I recommend cross referencing anything on that list that interests you to actual studies before coming to any conclusions.

Cooked up with vinegar and caraway seed, they are wonderful! I also like them shredded on salads.

Love them tossed in olive oil, balsamic vinegar, and rosemary then oven roasted with carrots! So good!

@PeachyCarol I've actually started making my own veggie broth. SO easy! I just save all the bits and ends of veggies when I'm cooking (keep a container for them in my freezer). Then when the container's full, I put all the bits in a pot with water, bring to a boil, and simmer for a while (maybe 30 minutes or so). Strain it (toss the solids in the compost), and voila! Veggie broth, with no "additives". And it's free.

I had never considered this. I like the idea!
