    Here is the recipe.

    Lentil & Pumpkin Lasagne

    1 large onion finely chopped
    2 Tbsp olive oil
    1 zucchini, sliced
    1 green bell pepper, seeded & diced
    1-2 minced garlic cloves
    1 lb pumpkin purée, fresh or canned
    3/4 cup red lentils
    14 oz can chopped tomatoes
    3 cups vegetable broth
    Salt & ground pepper
    2 Tbsp chopped fresh mixed herbs
    6 large sheets whole wheat lasagne; cooked
    1 1/2 cups ricotta cheese
    1 1/2 cups sour cream
    1 cup grated cheddar cheese

    Cook onion in oil until softened but not browned then stir in zucchini & bell pepper & cook for another 2 minutes. Add garlic, pumpkin, lentils and tomatoes & stir well. Add the broth, herbs, and seasonings then bring the sauce to a boil. Simmer for 20-25 minutes until the lentils are soft and the sauce has thickened.

    Place half the lentil mixture in the bottom of an ovenproof dish & top with half the pasta. Repeat layers. Mix ricotta & sour cream together, season with salt & pepper. Add half the cheese & spread mixture over the lasagne & top with remaining cheese. Bake 350 degrees for 30-40 min until topping is set & brown.

    I have made this vegan using a tofu spinach mixture & vegan sour cream.

    You can replace the cheddar with mozzarella

    They are basically the same thing in style. Fruit roll-ups come on a cellophane sheet and are very sticky and sort of tough. The fruit by the foot comes in a long roll and is more chewy. At least that's they way I remember it.

    Anyway, given the choice
