    @vegmebuff--To make the veggie subs I sautee onions, peppers (red, yellow, orange, green--whatever your preference), mushrooms and black olives in a tiny bit of olive oil. I season with oregano and garlic powder (you could probably use fresh garlic in w/the veggies). I serve them on a sub roll (the chewy ones are best!) topped with shredded mozzarella (can put in the oven to melt the cheese if you want), lettuce tomato & mayo. . . you can add pickled peppers or the crushed red pepper hoagie spread. I have never tried adding zucchini or yellow squash to the veggie mixture, but I think whatever veggies you like would be good. A friend of mine adds toasted sunflower seeds as well. . .this is one of those "recipes" where you can let your imagination run wild! Hope you like them!
