Healthy Christmas morning breakfast ideas??

Hi guys! So I'm hosting Christmas this year and I'm looking for some healthy breakfast recipes to serve my family. My dad eats high protein/low carb due to his gastric bypass. I'm looking for something really special that I can make for the whole family. It doesn't have to be necessarily easy, as I don't mind cooking. Just something nice. Thanks so much!!

Last Christmas we had a brunch. We made Eggs Benedict Bread Pudding from Cuisine at Home, a winter fruit salad and broiled tomatoes. The fruit salad looks like Christmas. It has mint leaves and pomegranates so pretty.

Broiled Tomatoes
Serves 4
Ingredients
4 ripe tomatoes, sliced
6 oz. Swiss or Mozzarella cheese, shredded
4 slices pre-cooked bacon, chopped
Directions
Slice off both ends of the each tomato, then slice each tomato into 3 slices. Place tomato slices on a baking sheet. Top each tomato slice with cheese and chopped bacon. Turn on the broiler. Place baking sheet under broiler and broil until cheese is melted, bubbling and beginning to brown. Watch closely it happens really fast. Serve hot. Also delicious at room temperature.

My tastes may be skewed, but in my opinion, bacon-wrapped cream cheese stuffed jalapeno poppers go well with egg dishes for breakfast. Put a little cooked tomato based salsa/sauce on them and you've got a "Green and Red" holiday dish. (:0

I would make some type of crustless ham and veggie quiche and a big fruit salad along with a cocktail or hot coffee drink. Maybe serve with some mini croissants and jam for those who care to indulge a little more.0
