Maybe swap out the nachos and any breading for pork rinds to start with? If he likes pasta, check out Pasta Zero (shirataki noodles). Make little changes first.

Like @queenliz99 and @brianpperkins said you don't have to go low carb to lose weight, but if you want to, go for it.

Its not necessary but it the method chosen by the OP. How low carb are you going?

OP you can swap out high carbs for non-starchy veges...eg pasta or rice use a veg medley of steamed veges. You will tire of salad quickly unless you get plenty of variety.

If going low carb you need to make sure you eat more good fats, you could add a dressing (make with olive oil etc) to your salads. Stir fry your veges etc.

" looking to lose the weight so im low carb" indicates a perceived linkage.

If you are doing low carb because it makes dieting easier for you, then you could prepare the normal dishes he likes, but then edit them for your diet, for example prepare pasta for him and use the same sauce on some zucchini noodles for you.

Now if you are doing low carb because you believe it's the only way to lose weight, it's not. Many here have lost a lot of weight eating pasta and nachos. Reducing your calories is the only thing needed to lose weight, be it on low carb or not. If you aren't enjoying the diet or finding it hard, it's okay to increase your carbs to the level that suits you.

Stuff like hot wings, lemon pepper wings, grilled chicken breast which he can add bread to make a sandwich, there are many others just take your time and do a little research online I know of some great desserts but can be eaten only in moderation while low carbing

Make it as easy as possible for yourself. For example, cook pork chops or other meat for dinner. Make roasted veggies for both of you. Make some pasta or a baked potato for him.

Depending on what I'm make my husband, I will either eat the same protein and have it with vegetables only or, if I don't want what I'm making him, I keep plenty of options in the freezer. I always have roasted vegetables and spaghetti squash on hand.

Like others have said...Low carb is not strictly neccessary for weight loss but some find they excel on a low carb diet when they are losing weight.

The best weigh I've seen it explained is the main protein is the same its the sides that are different.

So if hubby wants Nachos...Ground Beef and Cheese...Hubbys puts this on his chips and whatever else for his nachos and you lay it over a bed of lettuce and have a taco salad.

Steak and Baked Potato...Fine. Just sub the potato for some loaded broccoli
