Shrimp & Veggie Stir-Fry

Hi, I made this over the weekend and it was bomb. Thought I would share.

What you need:
Raw Shrimp peeled & deveined
Broccoli
Carrots
Snap Peas
Mushrooms
Green onion
Garlic
Siracha sauce
Soy Sauce
Garlic Powder
Salt/Pepper
Corn Starch

What you do:
1. Coat the shrimp in corn starch and garlic powder. Fry them in a pan on each side for a couple mins. I used PAM olive oil spray.
2. When the shrimp are done cooking transfer to a plate. Add some more PAM spray and add minced garlic and green onion and sautee for a couple minute.
3. Add all the chopped vegetables & sauces. Stir for a few minutes.
4. Add the shrimp back into the pan with the veggies. Stir for a couple more minutes and DONE.

You can eat this with rice if you like, but I chose to eat it alone. Shrimp is very low in calories and you can have a ton combined with the veggies and its a large meal with very low calories. You can make this dish with chicken or beef as well but the calories would go up.
