I really don't know of a "quick" bone broth recipe. I cook my bone broth for nearly 3 days in the crockpot to get the most nutrition out of the bones. If someone else has a quick way, I'd be interested! (maybe just boil the heck out of it on the stove for a couple hours?)

I do the same. All in the slow cooker for a min of 24 hrs. With s tbsp of Apple cider vinegar to get all the nutrients out of the bones. We do a lot of soup around here as I always have a roast beef/pork/chicken/Turkey/lamb on the go to use the bones and trimmings from. My family eats a lot!

The quickest way is with a pressure cooker.

The slow simmering is what extracts the beneficial nutrients out of the bone marrow. Doing it faster won't work. If you want the nutrients of the bone broth and don't have a lot of time, you should roast the bones, break them up with a hammer, and eat the marrow out of them. Otherwise, just buy pre-prepared broth instead.

Depending on the carcass I am simmering(more fat on a hen vs a rooster for instance) I often leave it. If there is more than 1/4" hardened on top of my cooled, strained broth I will pick it off and feed it to the dogs. Otherwise it just adds flavor and fill me up calories

Just wanted to add that you can increase the nutritional value by adding vegetables to the pot along with the roasted bones. I use the scraps from veggie prep (celery tops, carrot peels, onion peels - well scrubbed, of course). Then I don't feel bad discarding them at the end. I also add herbs and seasonings for a tasty broth. B)

OP asked about a low-cal bone broth. If you skim off the fat, then it is very low-calorie!

I do this too. I have a bag in my freezer that i add to every time i chop veggies. When the bag is full, its time to make broth!
