I'm just getting the hang of this whole cooking thing, as a 22 year old with a small child and a husband I want to create something easy and healthy that my family will love. Please comment with your favorite crock pot dish!

There is SO much you can do with a crockpot, I can't pick a favorite! I have 4 sizes of crockpots for different things, and use them all the time! A good place to start is this blog: ayearofslowcooking.com/2007/12/alphabetical-listing-of-recipes.html I also just do some very simple things like pulled pork (put a pork roast in, I just season with chicken seasoning and garlic, and let it go all day on low) and chicken breasts (just put them in and season with whatever you like, even can be done from frozen).0

Italian Roast Beef is my favorite one so far...
Chuck Roast (usually I get these BOGO and always have them in freezer)
Packet of Onion Soup Mix
Packet of Good Seasons Italian Dressing
Can of Low Sodium Beef Broth
Can of Water (using the Beef Broth Can)
A 12oz Beer (optional, just adds flavor)
Put all in crock pot, turn on low and leave it all day. When you get home, take the meat out, shred it (removing fat), put the meat back in. My BF uses a deli bun, I typically either have a sandwich thin/or just eat the meat with a side of steamed broccoli.
The meat is DELICIOUS. And it makes your home smell amazing!0 -

Easiest is chicken tacos.
Chicken breasts and green salsa. Throw it in the crock pot and let it cook all day. Shred, put on tortilla with your other taco toppings.... So yummy!0 -
Does meat cooked in a crockpot need to be completely submerged in some type of liquid/sauce? Or do you just put some type of liquid/sauce on the bottom of the pot? I've always been confused by this.0

Depends....pork loin doesn't need any liquid added.
Whole chicken....place 2 (or 3) small balls of foil in the bottom of crock pot. "Perch" a whole seasoned bird on top of the foil (fat drips away from bird) . Cook on high about 4 hours and done.
Chicken breast is so lean that it needs "something." Taco seasoning & salsa....yum. Take 2 forks & shred the meat.0 -

These are my favorites:
The hand's down, favorite crockpot meal in my house is Carne Guisada. It's the best beef stew I've ever tasted in my life, and make that aji picante sauce - it brings it over the top.
Chicken Enchilada soup is a close second. We use chopped zucchini in place of beans.
I make this Chicken Cacciatore with mushrooms probably once every six weeks. I keep it frozen in portions at all times. My husband thinks it's the best, and I eat it for lunch pretty often at work.
Turkey picadillo I also make and freeze. Sometimes if I'm super hungry, I pull a cup and mix it with sauteed cabbage for "crack"slaw
This Chicken Tikka Masala - easy and really good.
White bean soup cheap and more flavorful than you'd think.
This Thai coconut chicken soup is also really good and has a lot of vegetables in it.
