Strawberry-Kiwi Muffins - Only 196 Cal per Muffin

These are so good. I can't believe how good they are for such little calories per muffin. I used regular eggs, but if you want to cut back a couple more calories you could you use egg whites or egg beaters. I also have no issues with sugar, but if you do you could use stevia or some other sugar substitute that measures the same as sugar.

2 c. all-purpose
1 t. baking powder
1 t. baking soda
3/4 t. salt
1/2 c. margarine - country crock with calcium, softened (using actual butter will change calories to be about 27 cal per muffin higher)
1 c. granulated sugar
2 eggs
1 t. vanilla
8 oz sour cream
1 pint small strawberries
1/2 c. diced kiwi
1 T. granulated sugar
1/4 t. ground cinnamon

Preheat oven to 375.

Chop strawberries and kiwi into small pieces and set aside. Mix flour, baking powder, baking soda, and salt into a bowl. In a separate bowl whip margarine for about 30 seconds, then slowly add in sugar and whip till combined. Add eggs and vanilla and mix. Alternating between the sour cream and the sugar mixture, slowly mix into dry ingredients until well incorporated.

Line muffin tray will foil liners and drop 1 rounded T. of batter into each one. Take fruit mixture and drop 1 T. (or so) on top of batter. Fill the muffin liners with more batter (appx. 3/4 of the way full). Take the rest of the fruit mixture and distribute evenly over the top of the all the muffins. Mix 1 T. sugar and 1/4 t. ground cinnamon and sprinkle evenly over all the muffins.

Bake for 18-20 minutes, till top is golden brown and it springs lightly to touch
