increasing calories

i have lost 15lb in just over a month and have noticed my weight loss is becoming increasingly slow, i started to track my calories using my fitness pal and realised i was actually only getting around 500 cals every day, but did not feel deprived or like i was starving myself at all, despite being over 1000 calories short on the days i went to the gym.
i have got used to what i eat and need advice on how to take in an added 700 calories in a healthy way

    Eat calorically dense foods like peanut butter, whey protein, fatty beef, cheese, etc

    "on days I went to the gym" - is the 500 calorie figure net or total?

    nuts, nut butters, saute or roast veggies with olive oil, full fat salad dressings, avocado, etc. When you're not getting enough calories, it's usually an indicator that you've cut out too much fat. Fat is essential to good nutrition and health, you need way more than just a bunch of fruits and veg...that's great for vitamins and minerals, but you need fat for hormone balance (when your hormones become in-balanced you can have a hard time losing weight), heart health, brain function, organ function, etc.

    Full fat versions of everything add up the calories pretty quickly. I suggest adding 100 calories per day until you get to your goal.

    This is true VLCD, then. You should not eat that little unless medically supervised/instructed. Step it up; you need more calories. A glass of whole milk with real chocolate syrup or some yogurt that isn't light or ...

    ETA - I am suggesting treats of a sort that are not likely to be such a giant shock to the system as starting to eat fatty meats or more fatty versions of your regular items (which you should do, but not all at once)

    i started out healthy, i think what happened is as i continued the diet i tried new foods so i wasn't eating the same thing every day and wasn't aware that the number had dropped so low!
    i'll have no trouble at all eating cheese or peanut butter don't worry :)
