Hi,
How do I calculate the nutrition of various cheeses I make at home? Say I take 1 gallon whole milk and a quarter gallon skim milk and after cooking and souring I get three quarts cheese. Is there a formula to come up with calories and macros? I can't just look at a store bought item because the I giddiness I put in change fat content of the final product.

As far as calories go, you would figure out the total calories in the amount of milk you are using, then weigh your final product, the difference would be the amount of whey that was removed. A cup of whey, weighs approximately 8.84 ounces and one cup of whey is 59 calories. So you would multiply the difference by 59 and then subtract the total from the starting calories.0

Entering the ingredients into the recipe builder should do all of the math for you. I like to weigh my final dish with a food scale and then list the servings as the weight in grams. That way when I have some later on logging the food is easy0
