Gluten, Soy and Dairy

I went to a new Doctor today and he has put me on a Gluten, Soy and Dairy Free diet.
He is a Kinesiology Specialist and he found I have a lot of allergies to certain foods. He wants me to start this diet and I don't even know where to begin. He has given me a list of foods but I'm not sure how to read labels to eliminate these from my diet. Can anyone help with recipes or even just where to start.

    Look for the allergy warning section of the package - wheat, soy, and milk will all be labeled as allergens if they are in the food (at least in the USA).

    "new" doctor, as in today was your first visit? How did he determine in one visit that you had these allergies? Had you had previous lab work or skin tests?

    Are you allergic to the proteins or the oils as well? I also have a soy allergy and have found that I can eat soy lecithin and soy oil because they don't contain the protein. If that's the case, you have to skim the whole label for soy protein because the oils are not counted differently from the protein.

    Might be easier just to stay away from foods with lots of ingredients on the labels.
    How about a green salad for lunch with olive oil and vinegar dressing. For dinner some grilled chicken breasts with broccoli or other veggie on the side? Start your shopping at the produce department.

    Your best bet until you get used to reading the labels would be to avoid packaged foods all together. Fresh meat, produce, nuts should be your building blocks. Try looking up the paleo diet, it's essentially what that doctor has put you on.
