Thai Sweet and Sour Soup

I found this recipe in Womens Fitness magazine (UK, June 2010 edition), tried it tonight and it's lovely! Works out as around 180 cals a portion too.

1 Litre Fish Stock
1 Stalk of Lemongrass
2 Limes
2 tablespoons of honey
1 handful of corriander
500g of prawns (shelled)

1) In a large saucepan, gently heat the fish stock
2) Crush the lemongrass thoroughly
3) Mix the juice of the limes with the honey, lemon grass and add half of the stock, heat gently for 5 minutes
4) Remove the lemongrass and pour the mixture into the rest of the stock
5) Add the chopped coriander and simmer for 2 minutes stirring continuously.
6) Add the prawns and gently poach for 5 minutes.
7) Garnish with coriander when serving,

I added noodles to my soup to bulk it out a bit as well which you would need to add for your diary. If you adding noodles, I put mine in at step 6.
