Check out the cookbooks Veganomics and Happy Herbivore. Both contain really easy vegan recipes that are quick and tasty. There are, of course, recipes in there that are more time consuming, but these are my go-tos for vegan recipes. Last night we made a lentil-couliflower curry that was phenomenal. My husband and I are both vegan, and have really played with a lot of foods to find what works for us.0

Not vegan, but I do enjoy vegan meals quite a bit. My favorite vegetarian and vegan blogs are Oh My Veggies (vegetarian) and Oh She Glows (vegan).0

If you have an Asian market nearby, I strongly suggest spending some time looking around there, as it's pretty easy to find vegan/vegetarian substitutes for things like pork, chicken, prawns (don't make the mistake we did of not following the directions to the letter). There's also chicken-less chicken broth, etc.
My roomies (one omni, one vegan) and I LOVE LOVE LOVE kimchi-fried rice. It's so so simple and really good. Maangchi's site is full of recipes that can very easily be veganized; what we love about this one is that it's so flexible and simple, and yet so yummy - you can add or remove whatever you like. I just made a red lentil soup with coconut milk, red curry, tomatoes, sweet potatoes, onion, ginger, garlic & serrano pepper. You can add any vegetable, greens work well along with some chick peas. Honestly, so tasty and flavorful, fast and cheap! Also, so much better the 2nd day.0

Grilled or roasted vegetables on top of pasta or polenta. You could add a bit of parm to yours.0

Chickpea Salad:
1 can of chickpeas
2tbsp Brianna's Vinaigrette
About 1 tbsp lemon juice (gently squeeze 1/2 of a lemon)
1/2 tbsp rosemary
1/4 tsp salt
1/4 tsp pepper
1/2 cup fresh parsley
*Combine everything in a bowl and eat cold.

Substitute cooked lentils and/or Beyond Meat Beefy Crumbles for the ground meat, liquid aminos (or vegan version) for the Worcestershire sauce, mushroom broth for beef broth, and omit the dairy or use nut-based substitutes. It's so good that my meat-and-potatoes husband loves it.
I find that almost any recipe can be adopted. Cooked lentils with steak seasoning make a great sub for ground beef (and Beyond Meat is pretty good). I eat dairy and fish, so I don't typically sub those out, but no reason you can't.0 -
