So I am on the Road pretty much 24/7. Living out of hotels, and driving 8-12 hour days. I put off getting fit because of my hectic schedule but I have found a way around it, and I am making myself change now for my own health.

I love Naked Smoothies they are great snacks for on the road that you can pick up at almost any gas station or walmart or target
I also am good with salads, but is there anything that anyone might could add that is easy that doesn't have to be refrigerated or can be microwaved to eat that is good for you. It seems all the microwavable food is full of GMO and is high in carbs an calories

Fruit doesn't need to be refrigerated. And some veggies would be fine, too. As for protein, perhaps jerky (find one that is less processed with less sugar?). How about almonds (could be difficult to monitor how many you eat if you're snacking as you drive... Easy to over consume).
Canned tuna. You could get individual packs of mayo if you like it with mayo... They don't require refrigeration.

Have you considered getting a small, soft cooler? We take one when we travel on road trips. I can fill it with ice at gas stations. Some gas stations have fruit, deli meat, cheese sticks, hard boiled eggs, etc. Or, make a stop at a store, like Walmart, for a few basics to stick in the cooler. It would fit enough for a day or two.

Also, a Thermos might be helpful. If you filled it before leaving or, when you do find a good meal, buy extra and put it in your thermos for later. It might not last 8 hours if you don't warm the thermos first, but it might last a couple.

Also, some fast food places have reasonable choices if you're careful. At Wendy's you could grab chili and a side salad. Or a grilled chicken sandwich (I always take off the bun). Or a salad is a decent option, especially if you're careful with toppings and dressing. Plus, calorie counts are available which make for easier tracking. You could put the chili or chicken in the thermos for later. Or get extra salad and put it in a cooler for later.

I didn't even think of a thermos that is a great idea. I love soup and that would sit well with the thermos. I do have a cooler, but there is not a lot of room in the vehicle with our bags and such. But i do stop and buy fresh veggies along the way.
