Beet(root) greens

I bought a beautiful bunch of beet(root)s from my local market today with greens attached. I obviously don't want to throw them away so does anyone have any tasty simple recipes I could use to cook them?

    Throw them in a soup! Or sautee and add to just about anything, I'd have it with my scrambled eggs, ontop of potatoes, in cottage cheese, etc. Play around. :)

    Agreed. I use beet and spinach greens in soups or stirfrys and especially in our home made pesto sauce!

    I wash them and use them as a salad green. Treat them the way you would spinach

    Thoroughly rinse the leaves and then steam.

    I just started using my beet greens. They are sooo good sauteed in butter (I use Earth Balance vegan soy free which is just 50cal for a 1/2 tbsp) with some garlic, a little bit of onion!

    I think they're absolutely the best-tasting greens of all, so I like them just sauteed (maybe a little garlic) or steamed, to better appreciate the flavor. A little shot of good vinegar is tasty, and it can't hurt to add a bit of a healthy oil (or nuts/seeds) so as to get the best nutrient absorption.

    You can cook them however you might cook swiss chard, they're closely related.

    My favorite is sauteing them with caramelized onions. When nearly done, I add a can of black beans and heat through.
    Another good one is roasting them with olive oil and seasoning, and during the last few min sprinkle on crumbled feta and cook until warm and gooey.
