Meat in soup

How do I calculate the meat if I m doing chicken soup? I mean I m eating the meat, but how do I weigh it if I can t get the bone out before cooking it?

weigh it with the bone in, once the bone is removed weigh the bone, subtract the lower weight from the higher weight
