I am looking to gain knowledge on better nutrition. I don't just want to lose the weight, I want to improve my health and want to understand how food can work for me. I don't want to be afraid of eating carbs or fatty foods, I just want to focus on overall nutrition. How have you gained your knowledge on nutrition? Any advice would be great.

My advice is don't listen to people on here, especially me
I would recommend looking for a book on the subject and reading it, don't go for anything that promises anything like lose weight with .. but something that explains nutrition and was written in the last 5 years.
I just read a book on your bodies energy systems, what uses the energy, and really liked it but it was somewhat technical. The author has a website 8weeksout, it has some videos on nutrition which may be helpful.
