Healthy Eating Ideas For Boat

My husband and I spend the weekends Friday, Saturday and Sundy on our boat at the lake so I don't really eat a whole lot during the weekends because its hard to come up with things that aren't crap to eat while we are there?

    Bump - in my case read caravan instead of boat, but it just has a couple of rings to heat things, no oven, no microwave. Also no fridge.
    Ideas welcome!

    Breakfast is easy - bran or wholewheat cereal
    Sandwiches are good for lunches - portable if we're busy.
    We like a hot meal in the evening & that's the difficult one.

    Fresh veggies, and fruit (will work even with no fridge as long as its not to hot) nuts, pb, that kind of thing

    Does your boat have a galley, or do you need to prepare everything ahead and keep in in an ice chest? We've spent months aboard our boat and cooked just as if we were at home. If that isn't possible: Prepare ahead: green, macaroni, or potato salads, roasted or fried chicken, cheese trays, hard boiled eggs, beef*, ham* or turkey* lunch meat (*all salty), bread for sandwiches, tortillas for roll ups, watermelon, cantaloupe, veggie tray with low fat dressing, lots of water and iced tea.
