B-fast Veggie ideas/ mid morning snacks

Looking for Ideas/ Recipes for incorporating more veggies into my morning. I'm all for green smoothies, and adding spinach to pretty much anything, but the husband's not so keen on cooked spinach & smoothies that are green. Also looking for Veggie snack ideas that are a little more substantial then carrots, broccoli, cauliflower, etc. + dip. They taste great, but get boring after a while. What suggestions do you all have? :smile:

    Eat more vegies at breakfast by thinking outside the box with "breakfast" food. Eat whatever you'd eat for lunch or dinner!

    I solve the snack problem by not snacking. I don't feel the need to put food in my face every 2-3 hours, I find it more of an inconvenience!

    I make a breakfast casserole with eggs, turkey sausage, goat cheese, and tons of veggies. I'll use whatever I have on hand, but go tos are onions, bell peppers, mushrooms, asparagus, and brussel sprouts.

    ETA: I make it in a 9x13 pan, cut into 10 portions and freeze for later.

    Just about any vegetable can go into an omelette (okay, maybe not celery? Lol). I buy my veggies frozen and always add a handful or so to my eggs. Also, I agree with livingleanlivingclean. Have chicken and broccoli or a stir fry for breakfast :smiley:

    Maybe weird, but I super love chopped broccoli in my scrambled eggs! Just chop it finely and cook it in your pan before you add the eggs. I also like to add in onions and mushrooms.

    Make a hash out of any kind of veggies (include a bit of potato if you want to ease yourself into it!) like chopped cauliflower, and then put over easy eggs on top.

    Have you made kale chips? Those are an easy and tasty veggie snack. I also like zucchini fritters or patties--shred zucchini, then press the water out with a towel. Add egg, parmesan cheese, italian seasoning, garlic powder, a little flour or cracker crumbs, and form into flat patties and saute in a nonstick pan.

    I like to keep a mix of chopped tomato, cucumber, and red onion in the fridge to throw on top of salads or wraps, anything like that to help you get your veggies in is good in my book!

    Also, leftover roasted veggies are really good as a side dish to breakfast or as a snack. If I'm making roasted veggies for dinner (usually broccoli, cauliflower, brussels sprouts, asparagus, and/or green beans) I'll roast an extra tray to eat cold on salads or leftovers the next day. You could easily throw these into an egg dish too.
