Sweet potato potato skin
I found this recipie on Facebook of all places and made it the other night . It's healthy and not high in calories but super yummy !
Ingredients :
Sweet potato ( washed and dried)
Milk ( about 2-3 tbsp)
Salt , pepper
1 tbsp EVOO ( less of you can , or omit entirely)
Fat free mozzarella cheese ( shredded about 2 tbsp)
Cheddar cheese ( shredded , about 2 tbsp)
1-2 strips bacon ( cooked and crumbled )
1-2 tbsp sour cream for dipping IF desired
Chives for garnish
Sheet pan with non stick aluminum foil
Bowl
Instructions:
1. Preheat over to 450 degrees
2. Poke holes in sweet potato. Place on cookie sheet ( use non stick aluminum foil), and bake in oven until knife can be inserted without resistance), about 10-15 min.
3. When done , cut in 1/2 , scoop out innards taking special attention not to break the skin ( u will need them for the filling soon).
4. Place hollowed out potatoes back on sheet pan . Sprinkle with EVOO and place back in over for 10 min.
5. While skins are crisping, take filling and add milk, sat and pepper to taste . Add only enough milk to keep everything blended , don't add to much or it will be runny ).
6. Once skins are done , fill them with your mixture .
7. Sprinkle both cheeses on each 1/2, add bacon crumbles .
8. Return to over for 1-4 min until cheese is bubbly .
9. Garnish with chives
10. Eat and enjoy with sour cream , OR just eat filling
