Waffle iron omelets!

I was experimenting with how to make easy eggs to go ideas, and I tried making waffle iron omelets last night...big success! They froze well and reheated fine, and were super tasty and easy.
Here's the recipe:
6 eggs
1/3 cup low fat kefir (could swap in greek yogurt or milk+flour, just something to thicken the eggs)
1/2 a sweet potato
1/4 cup cheddar cheese
4 jones dairy farm breakfast sausage links
Salt and pepper to taste
Beat the eggs and kefir (or milk) until smooth. Shred the potatoes (this is key, so they cook quickly within the omelet), chop up the sausages and shred the cheese. Combine with the eggs. Use a 1/3 cup or 1/4 cup measure to spoon the mixture onto the waffle iron. I cooked these on medium, it took maybe 2-3 minutes or so per waffle.
Yield was 5 waffles, so ~180-200 calories each depending on the size of your eggs and your mix-ins. You could swap in peppers, broccoli, or spinach instead of potato, though I would suggest adding some flour if you aren't using a starchy veggie, since the starches help the whole thing keep a more waffle-y shape when it's out of the iron.
I reheated it in the toaster at work, and it was perfect.
