Shredded Chicken and Black Bean Burritos

This is a favorite of mine for a high protein/fiber meal. Goes great over a bed of lettuce the next day.

•2 tblsp olive oil
•2 skinless chicken breasts – about 8oz total
•salt and pepper
•1 red onion, diced
•¼ cup beer
•1 can black beans, drained (reserve bean water)
•1 can diced tomatoes, undrained
• ¼ cup bean water
•1 ½ tblsp Homemade Taco Seasoning (see previous thread)
•La Tortilla Factory Low Carb Whole Wheat Tortillas (6g net carbs/12g fiber)

1. Heat olive oil in sauté pan over med-high heat.
2. Season chicken with salt and pepper to taste. Sear chicken in oil about 4 minutes per side. Remove chicken from pan and reserve on a plate.
3. Add diced onion to pan and sauté until translucent, about five minutes.
4. Drain black beans, reserving bean water.
5. Add beer to the pan and scrape up any bits from pan. Simmer for one minute to cook off alcohol. Add diced tomatoes, bean water and Homemade Taco Seasoning to the pan, stir together. Return chicken to pan submersing in the liquid. Bring to a boil, reduce heat and simmer covered for 8-10 minutes until chicken is cooked through.
6. While chicken is cooking enjoy the rest of the beer you opened (if that's your thing).
7. Remove chicken from pan and shred. Return chicken to pan and add black beans. Increase heat to high and reduce until mixture has lost most of its liquid. Serve with any burrito fixings you prefer.

    Add a little blue cheese and some green chiles and you have my go to lunch lately. (Minus the beer)

    Sounds delish, also without the beer but the blue cheese sound like a nice touch. Thanks for the idea OP & Sabine for adding your touch. :smiley:

    Hmm, blue cheese, I've never tried that. Sounds interesting and tasty.

    Have tried diced tomatoes with chiles, that is a great add-in (I omit them as the wife doesn't like things too spicy).

    But beans are delicous! How could you possibly resist?

    I make burritos out of an entire package of tortillas at a time (usually Ole Wellness low carb/high fiber) for my family. Flash freeze seam side down then you have 8 in your freezer that will last for months and almost no extra work.

    @Queenmunchy Not a bad idea, would sure beat anything you find in the frozen food section
