Mini Chicken Meatloaves

Chicken Meatloaves with Plum Sauce
MAKES 8 for 165 calories each
Olive oil spray
650g chicken mince
70g (1 cup) fresh white breadcrumbs (made from day-old bread)
1 small carrot, peeled, shredded
4 shallots, trimmed, thinly sliced
2 tsp grated fresh ginger
1 tsp Chinese five spice
60ml (1/4 cup) plum sauce
Mixed salad leaves, to serve
Plum sauce, extra (optional), to serve
instructions
Step 1
Preheat oven to 180°C. Spray eight 185ml (3/4-cup) capacity mini loaf pans with olive oil spray to lightly grease.
Step 2
Place the mince, breadcrumbs, carrot, shallot, ginger, five spice and 2 tablespoons of the plum sauce in a large bowl. Season with salt and pepper. Stir until well combined.
Step 3
Divide the mixture among the prepared pans and smooth the surface. Brush the tops with the remaining plum sauce. Bake in oven for 20 minutes or until the juices run clear when a skewer is inserted into the centres. Set aside in the pans for 5 minutes to cool slightly. Carefully remove the loaves from the pans.
Step 4
Serve warm or cold with mixed salad leaves and extra plum sauce, if desired.
