Leek Recipe NEEDED!

My fiancé ordered Farm Fresh To You trial and we got two huge leeks and I don't know what to make with them. Any simple recipes that don't need a lot of other ingredients? Thanks!

I love potato leek or cauliflower leek soup! I just chop some onion and the leek and simmer it all in 2 boxes of broth, then blend it when the cauliflower/potato is soft.0

You can use about anywhere you use onion. Just make sure to chop and rinse in a big bowl. The sand with go to the bottom of the bowl and you can skim the leeks off the top. Leeks are sandy little things. Here are two recipes for you. I make cauliflower leek soup too.

As the others suggested leek soup so easy to make, I also love a leek risotto made in the oven so still super easy!

I usually just clean them, cut lengthwise in half, and put under the broiler with some root veggies. Otherwise, I use them anywhere I'd use cooked onion.0

I use white to light green parts. I have seen videos and recipes that use green parts in stock and discard. Just wash them really good there can be a lot of sand and dirt between layers.0

Oh good! I am glad I responded. I have never seen anyone say it was okay to eat them. I always wondered why. I will give them a try next time. I have to admit I use more and more of the light green to medium green everytime I cook with them. I always wanted them to be edible. Thanks so much!0
