I've been on MFP since 1st Jan. I've generally been between 500 and 300 calories below the amount each day and had a good weight loss. I went out for dinner Friday and ate at maintenance and now I'm up 2lb. I don't know what I did wrong to be honest.

You weighed yourself after a big meal.
It was probably high in sodium. Drink water and wait a few days. It'll go away.0 -
Have you weighed yourself every day? If you do that, you'll see that your weight fluctuates from day to day. Water circulates through your body, and the food you eat weighs something. If you eat more than usual, you will be heavier until that food has passed through your intestines. You can't expect to weigh less steadily, every day. Some days the display will even show a "gain" even though your are losing.
I'm not sure what amount you are referring to, but don't eat under your goal. You're supposed to hit it. You will lose weight from a calorie deficit, and that deficit is worked into your goal.0 -
Going out to eat=high sodium intake=water retention. It will come off within a few days.0
