I can't figure out how to change it to 10,000 steps as goal versus the 5,862 that is the default.

It's not a default, it will increase automatically in line with your measured activity. If you consistently hit 10'000 steps it will adjust up to and over that over time. It's one of the great things about the Garmin trackers, the step goal changes to meet your ongoing measured activity.
I'm pretty sedentary, I recently upgraded to the Vivoactive from the Vivofit. It started at about 4000 steps, two weeks in and I've been making an effort to hit the goal every day and it's now at over 6000 steps.0
