Diabetic Dessert
I have a serious sweet tooth. But, unfortunately, type 2 diabetes runs in my family. I am insulin resistant, my mother and grandmother are mild diabetics and on glucaphage, and my great grandmother went blind and passed away from diabetes.
Needless to say, I am very interested in healthy "desserts".
My favorite at the moment:
1 minute brownie
1 tbsp coconut oil, 1tbsp coconut flour, 1tbsp water, 1tbsp unsweetened cocoa, a couple of drops of stevia, and 1 tsp raw honey.
Melt coconut oil in microwave for 30 seconds. Add the rest of the ingredients and mix well. Microwave 45 seconds.
The result is a fudgy, dark chocolate type of brownie. I love it!
