Am I eating enough? My body resists to lose weight.

Hello everybody, thanks for reading the discussion.
I've been for more than two or three months trying to lose the last pounds of extra fat that stores my body. However, I haven't had any progress I've lost around 30 pounds before (I was 218, now I'm 178) but suddenly I stopped losing weight.
Now some data. I'm male, 20 years old, 5ft 10in tall, and weight 178 pounds. I used to have a 1500 to 1600 calories diet during the previous loss, but I recently (two weeks ago) increased it to 1750, that's what MyFitnessPal recommend me with updated info although other calorie calculators recommend a 2500 - 2600 maintenance calorie diet. I regularly do exercise (jogging or HIIT 3-4 times a week).
So, I've read before about under eating and "starvation mode" (not sure yet about it, I need a further investigation), and I've noticed that i'm going through several symptoms caused by under eating. That's why I ask to you, do you think I am eating enough? could that stop the weight loss? If so, how should I change the diet to revert the situation without gaining fat?

No, I don't think you're under-eating. Do you weigh your food? How accurately do you log?0

Here's the thing starvation mode doesn't happen in the context you are referring to. If you where starving, you would be losing weight.
If you aren't losing weight then you are likely eating at maintenance. Are you using a food scale to weigh all your solids and a measuring cup to measure all your liquid? Are you counting things like condiments and oils and butter ?

I missed the part about you being a 20 year old male, so maybe you could eat more. Maybe you're more active than you think.
I think the whole "starvation mode" thing has been greatly exaggerated, though, in my opinion.0 -

It just intrigues me the great difference between MyFitnessPal calorie recommendation and other calorie calculators.0

How long has it been since you lost weight? Just the 2 weeks since your goal changed? If so, have patience. Weight loss isn't linear and there could be a whole host of reasons why there's "no loss" during this time.0

Under eating will not stop weight loss. Your metabolism will slow somewhat, but can never stop (unless you die).
1750 sounds about right for your maintenance level. That's why you lost weight at 1500.0 -
