What did everyone have for their evening meal tonight? Trying to get some ideas on things to have for my evening meal, I cook for myself and my husband.

Not quite dinner time here yet, but we're having pulled pork, broccoli, and corn on the cob.0

Husband is getting Actifried chicken drumsticks with buffalo sauce, broccoli, and mashed potatoes. I try to make sure he has a 1000+ calorie dinner so I make the mash with lots of butter and usually add some cream cheese as well.
I'm having the same bagged salad (Dole Chop Chop) in BBQ Ranch flavour that I have almost all the time, with some smoked tofu and added tomatoes, bell peppers, and green onion. Half a bag plus a serving of tofu is about 450 calories, so with some added vegetables it's around 550. I'm not a huge chicken person so I make myself something different.0 -

Speedy Taco Soup
1 (12 oz) can chicken with liquid
1 (14 oz) can chicken broth
1 (16 oz) jar mild thick and chunky salsa
1 (15 oz) can ranch-style beans
In large saucepan combine chicken, broth, salsa and beans. Bring to boil, reduce heat and simmer 15 minutes.
Optional toppings:
Crushed Doritos
Shredded cheddar cheese
Dollop of sour cream
4 Ingredients I put in my recipe builder, had to substitute beans, since I could not get the one kind

I found Cobblestone Onion Rolls today and they are so good I might have to avoid buying them too often lol
I lightly toasted one then made an open face sandwich with a mixture of chopped baked egg, mashed avacado, diced pickle spear and a touch more salt. It was amazing.
Eta: I also roasted salted cauliflower until it got kind of crispy0 -
